Overview
Matthew Kenney Culinary Weekend Intensives and Daily Workshops were created to meet the increasing interest in living foods and the art of raw food preparation.
Our programs emphasize the use of whole, organic, unprocessed, plant-based foods to achieve healthy, aesthetically refined and flavorful cuisine. Our intimate classes and personalized instruction allow for successful integrated hands-on experience, within a custom designed, state-of-the-art living foods kitchen.
We welcome students from around the world into our interactive culinary programs. Our extensive, refined living cuisine instruction is based on structured and classic building blocks of culinary programs.

Weekend Detox
Weekend Detox at Matthew Kenney Culinary is a 1 or 2 day, 6/12-hour course, offering lessons in how to prepare healthy, raw cuisine, as well as providing meals designed to jump-start your health. Your course will focus on four components of a detoxifying diet, while utilizing the Matthew Kenney technique to prepare recipes that are both nutritious and delicious.
The areas of training include:
- Juicing, including types of juicers, shelf life and flavor combining
- Blended recipes, including green smoothies, soups and liquid meals
- Healthy raw snacks
- Light and flavorful raw recipes
The recipes in this course are based on those in Meredith Baird and Matthew Kenney’s new book, Everyday Raw Detox. Students will also receive a digital copy of the book. Each class will begin with a juice or blended drink and lunch course lessons will guide students as they prepare their own lunch and dessert. Students receive a comprehensive introduction in a one day course, but two days will provide a more extensive insight into the principles of a healthy raw diet as well as a full weekend of nutritious cuisine.

Essentials of Raw Cuisine
Essentials of Raw Cuisine at Matthew Kenney Culinary is a 1 or 2 day, 6/12 hour course, offering students comprehensive training in the principles behind the preparation of raw food. We also offer Raw Techniques, which focuses on a modern, creative approach to living foods. These programs are structured in such a way that students of all experience levels are able to learn, enjoy and innovate raw cuisine at the highest level.
We utilize the finest ingredients, state of the art equipment and employ professional instruction to deliver the most efficient raw food classes available. You will prepare a variety of cutting-edge recipes, develop a deeper understanding of the principles behind raw cuisine and be on your way to understanding how to prepare delicious, nutritious, raw cuisine.
Each course also fosters individual creativity and involves a final project, where students create their own proprietary dish. Students are encouraged to enjoy the meals they create during the class final.

Advanced Raw Cuisine
Advanced Raw Cuisine at Matthew Kenney Culinary is a 2 day, 12 hour course, offering students training in the preparation of advanced raw cuisine. This course applies innovative techniques and advanced equipment toward the development of contemporary raw food recipes.
In this course, students are exposed to the latest methods utilized in the Matthew Kenney technique, as well as an in-depth study of plating methods, flavor balancing, and the creative process behind successful plant-based cuisine.
This fast paced course is ideal for students wishing to advance their knowledge of raw cuisine and those wishing to attain refined culinary skills to apply to plant-based foods.
2 Day – $575
Raw Cheese, Chocolate, and Desserts
Raw cheese, chocolate and desserts is a two day course focusing on the fascinating world of preparing your own raw, vegan dairy products all within the unique style of Matthew Kenney Culinary. Raw cheese, chocolate and desserts are some of the most impressive, and delicious components of gourmet raw cuisine.
In this course students will learn how to prepare their own nut milks, ice creams, cheeses, chocolates and other sweet treats. This course is truly dressed to impress. Although the content of this course is advanced in formula, the technique is simple, and suitable for all kitchen skill levels.
