LEVEL 1: FUNDAMENTALS OF RAW CUISINE
The curriculum of the Fundamentals of Raw Cuisine Online is defined by its four weekly outlines, each delivered in a series of 5 course sessions, progressing in such a way that the techniques learned are applied. An emphasis is placed on knife skills, proper food handling, proper use of equipment, knowledge of ingredients, building a raw food pantry, how recipes work, recipe writing and testing, and preparing meals with professional execution. Each session features video lectures and demonstrations, practical and written assignments, and other
unique forms of instruction. Every month in which this course is offered repeats the curriculum, which highlights seasonal produce and dishes of that particular month.
LEVEL 2: ADVANCED RAW CUISINE
For graduates of Level I: Fundamentals of Raw Cuisine, this course focuses on contemporary raw food cuisine, including pastry. In it, we train students in raw food preparation skills at the highest level, following the philosophy of Matthew Kenney. This course is available to a limited number of students, who work under the supervision of the program Instructor. This approach allows them to experience the inner workings of a high-end professional kitchen.
The program of Advanced Raw Cuisine is defined by its 4 weekly outlines, each building upon one another, its emphasis on the Matthew Kenney ‘Building Blocks of Raw cuisine’ and detailed exploration into raw food methods, including menu and product development. Students will become more comfortable writing their own recipes and understanding the best way to make substitutions. The recipes emphasize more developed layers of flavor, as students learn skills such as tempering chocolate, creating breads, cakes, pastries, advanced methods of fermentation, and creating raw cheeses.
FUNDAMENTALS OF PLANT-BASED COOKING
Fundamentals of Plant-Based Cooking features comprehensive training in contemporary plant-based cuisine. Students are trained in our proprietary culinary techniques, utilizing cutting edge methods to prepare minimally processed foods that are vibrant, delicious and nutritious. We have applied the same culinary ingenuity we are known for with raw cuisine, to plant-based cooking. all recipes are vegan, gluten free and allergen friendly. The course provides the ideal foundation for anyone wishing to embrace vegetarian as the next great cuisine.
The program is defined by its four-week structure. each week builds upon one another, in our standard Matthew Kenney ‘Building Blocks of Plant Based Cuisine’ teaching style.

Offered in the same structure as Fundamentals, our Advanced Plant Based Cuisine is defined by its 4 weekly outlines, each building upon one another. the course begins with traditional advanced techniques and evolves into the world’s most cutting edge molecular modalities.
ESSENTIALS OF SUPERFOODS, with NAVITAS NATURALS & JULIE MORRIS
The first educational course based on Superfoods, delivered in collaboration between the World’s premier Superfoods Brand, Navitas Naturals, and Matthew Kenney Academy Online.
The curriculum of Essentials of Superfoods is defined by its 4 weekly outlines, each course session progressing in such a way that the material learned is applied to additional instruction. Each session features cutting-edge video lectures and demonstrations by Superfood expert and Navitas Naturals spokesperson Julie Morris with appearances by Matthew Kenney, as well as other unique forms of instruction. Both cooked and raw plant-based recipes utilizing Superfoods are taught and prepared by students throughout the course. Each week includes both written and practical testing.
Our Nutrition program is a course in lifestyle nutrition by Matthew Kenney Online. Students will be provided with a comprehensive overview of principle nutrition information and common dietary healing modalities. The student will learn recipes and techniques from many different nourishing traditions; as well as a variety of raw food dishes that are focused less on the gourmet and more on healing. The approach that we offer is to gear students toward finding a balance within themselves by becoming well informed. We embrace students and cultures from all over the world. While our culinary program focuses on a raw food diet, we believe that education and balance is truly the key to understanding wellness. This course will include an overview of common allergens and the importance of excluding them in a healing diet. Our focus will ultimately be on the benefits of a raw food diet, the science behind it, and why we believe that raw foods should always be incorporated into balanced diet. Although, we do not stand behind an all or nothing approach- this course is plant based, and we do stand strictly behind a vegetarian diet. Through this program we strive to embrace the individual so that they are able to offer empathetic dietary guidance, and leave this program with a well-rounded knowledge of nutrition.
PLANT-BASED SPORTS NUTRITION with BRENDAN BRAZIER

FUNDAMENTALS OF PLANT-BASED FOOD PHOTOGRAPHY with ADRIAN MUELLER
In Fundamentals of Plant Based Food Photography, Adrian Mueller, photographer for Matthew Kenney’s Everyday Raw book series, teaches students how to capture food beautifully, with minimal equipment needed. Using existing daylight, as well as camera techniques, this course instructs students in the art of food photography to easily create delicious looking food imagery for use in blogs, websites, and printed materials. Subjects covered include: operation of camera in manual mode, the importance of depth of field, framing, angles, lighting, and use of negative space. This course demonstrates a comprehensive, easy to learn approach to food photography.
ADVANCED PLANT-BASED FOOD PHOTOGRAPHY with ADRIAN MUELLER
Advanced Plant Based Food Photography is for those with a basic understanding of food photography techniques, who wish to extend their knowledge beyond natural lighting in order to explore the possibilities of beautifully captured and styled images. In this course, professional food photographer Adrian Mueller builds upon the skills taught in Fundamentals of Plant-Based Food Photography, to demonstrate shooting with external lighting sources, including hand held flash, shooting in low light settings, as well as food styling techniques, the importance of texture, setting, and photographic editing and workflow. Students will be encouraged to develop their own photographic voice, creating not just images, but also the story behind compelling food imagery.
PLANT-BASED RAW DESSERTS
Our plant-based desserts course is a one of a kind gourmet culinary experience featuring vegan pastry recipes. Recipes featured are free of gluten, refined flour and sugar. We use only the most healthy/ fruit based sugars and unprocessed flours. Topics covered include frozen desserts, pastry items such as cookies and truffles, tarts and pies, and gourmet plated desserts. This course provides a comprehensive look at the method behind raw dessert pastry including the use of alternative flours, sweeteners, and dehydration techniques. Raw pastry technique is an important part of the new culinary landscape, and the skills learned in this course are truly cutting edge.
